1 Whole white Croaker Fish, 1 diced carrot,
1 diced onion (medium), 2 diced green peppers,
2, diced red peppers, spring onions, ground
black pepper, oyster sauce, Tabasco sauce,
sesame oil, Sweet & Sour sauce, corn flour,
bouillon cubes, Salt, and Tomato Ketchup.
Prep by dicing the carrot, onions, green pepper and red pepper if this has not already been done.
For the whole Fish:
Remove scales from the croaker using a fish scaler or back of a knife. De-bone the fish neatly (so that remains whole). Spice the fish with salt, ground peppers and bouillon cubes to taste. Shallow fry in a wide pan until cooked and slightly browned on both sides. Set the fried fish on a serving dish.
For the yellow sauce:
Place a pan on low heat and pour in the sweet & sour sauce. Allow it to steam for a minute then add 2 level teaspoons of corn flour to thicken. Add some sesame oil and allow it to simmer for another 2 minutes.
Dish the sauce over the fried fish. Cover it completely. Garnish with cucumbers and tomatoes if available.
